Well, yesterday we really weren’t in the mood to cook. So I hop into the freezer and, after rummaging around for a little while, come out with a bag of leftover lamb from Easter lunch. We waited for it to thaw then tasted the meat: it was as good as just-cooked.
So out came the maize tortillas, which literally mean “little cakes” in Spanish, and the lettuce pops out of the fridge, and just like that a smooth tzatziki is whipped up with the mint from our garden …et voilá! A scrumptious, gourmet tortilla is made. The mint sauce was perfect with the lamb, the lettuce gave it a nice crunch and the mini fries….well, they were just out of greed 🙂
