Red Cabbage

We all need some healthy food after the Christmas extravaganza. And I like using fruit and veggies that are in season. Cabbage is one of these. But not many people like it. So this is how to make it into an interesting salad or side dish and keep all its nutrients (that tend to leak out when it’s cooked).

Chop up your beautiful red cabbage as thin as you possibly can.

Put the olive oil, balsamic vinegar, anchovies, salt and pepper in a bowl…

…and mix until the anchovies are unrecognisable. Taste for salt.

Now mix the cabbage with the vinaigrette and let it marinate for a few hours.
