Last Saturday, I needed a treat. I had had a terrible sciatica all morning and had had to do all the housework anyway. I was absorbing my second ibuprofen when I hobbled into the supermarket, buzzing with Saturday shoppers and I wasn’t thinking completely straight. It took me hours to get everything I needed and by the time I got all my food home I needed a treat.
So I looked at what I had and decided I was going to make myself an avocado salmon bruschetta.
This is what I used:
Oh, and smoked salmon, of course!
Basically I made a different kind of guacamole – more in sync with the flavours I like.
I melted the butter with the mustard and cooked the shallots (I don’t like raw onion of any kind).
Then I chopped up the avocado and squeezed half a lime on it
and mushed it up with a spoon. I didn’t blend it because I like some difference in texture. Remember to taste for seasoning!
The rest is a piece of cake: spread your avocado on a piece of bread, lay the smoked salmon slices on top and, if you have and like them, crumble pistachios on top. That’s it! Honestly? It was easy, healthy and quick and so so satisfying 🙂
