I love salads. But I get bored extremely easily with food, so am always trying something new. And this was a success!
The ingredients are few and the preparation easy – what more could you ask for?

Now, the first step is to massage (yep, massage) your beef with some salt. Let the salt draw out the juices for between 30 and 60 mins. In the meantime, boil your potatoes in salted water. I started boiling them in salted water ever since I went to Tenerife and still haven’t stopped!
Heat a non-stick pan and sear the beef until you have a medium cook. Add some pepper.
Set the meat aside. When the are potatoes cooked, take them out of the water, cut them into chunks (and peel them, if you prefer. I don’t, usually) and fry them lightly in the meat’s juices.
Toss the meat and the potatoes together. When they’re cold, add the cherry tomatoes and the arugula and enjoy your summery, healthy beef salad!
