I have recently started making really good soups, broths and creams.
This is great for our yummy leftover Thanksgiving turkey…. if there is any left!
What you need:
- leftover turkey
- fresh bok choy
- chilli peppers
- spring onion
- a slice of lime
Get your turkey. If there’s some bone, better. Put it in a pan with all the ingredients, chopped up, except the bok choy and lime. Add water and bring to a boil. When it’s boiling, reduce the heat and simmer for at least 30 mins. Taste for seasoning and add salt if needed. Now drop in the bok choy and the noodles – when the noodles are ready, the bok choy will be too. Top with a slice of lime. Enjoy!
