Well, here’s what you can do with the leftovers. Because if you’re like me, you’re going to have made too much food and yes, there will be leftovers.
What you can do is a false risotto. Boil the rice (any short, thick grain will do) and then, when it’s 2 or 3 minutes away from being perfectly cooked, put it in the pan with the simmering leftover stuffing and leftover chunks of chicken. If you think they’re too dry, add some water or stock (but be careful not to oversalt!). Sautée the rice for a minute, just so it absorbs all the goodness, and then transfer it to an oven-safe bowl. Get the mayo a carefully spread it on the surface of the rice. Pop it in the oven at about 210^C, possibly on “grill” (so the top cooks) and when the mayo has turned golden and crunchy, you’re done!
