Comfort Rice

Sometimes I feel low. Very low. Usually, pasta is my comfort food. Often, eggs.

But sometimes, this dish comes up.

Full of goodness and umami, it’s ready to eat on your sofa with a warm blanket and the latest episode of your favourite series.

First, boil some rice. The best is risotto rice, Carnaroli or Arborio. Cook it in broth, instead of just salted water.

While the rice is boiling, break an very fresh egg in a bowl and beat it lightly with two huge heaps of grated parmesan.

When it’s ready, strain the rice and quickly mix it in the egg&parmesan (so the egg cooks slightly).

Sit down and enjoy.
