Onion cream and saffron. That’s all you need for this majestic golden sauce.
Choose egg pasta. If you can’t find it, make it. I can show you how (click here).
Mince your onion, and sizzle it on a non-stick pan with a drizzle of olive oil.
Add a spoonful of hot water – it can be from the water the pasta is boiling in, or even some stock – and now add the saffron.
Now for the heavy cream. Don’t forget to stir!
The pasta is now cooked (right?), so add it to the pan and sauté.
Add salt and pepper
And you’re done! How good is it?? (answer: spectacularly)
