My sister brought me waffles, for a change. She usually only brings me crumpets (because crumpets are like manna for me) but this time she also brought me a batch of waffles. That I had no idea how to eat.
So I opened up the big worldwide web and found recipes I didn’t feel like making or didn’t like.
Instead, I made a savoury waffle tower.
I warmed up the waffles and placed one on a bed of sautéed spinach mixed with walnuts and nutmeg. I put a wee bit of butter on that warm waffle and placed a slice of cheese, then a slice of ham. This was covered with a waffle, butter, cheese, ham and another waffle until the waffles finished. The top layer was (starting from the bottom): waffle, butter, cheese, fried egg and grated parmesan.
This lovely tower was put in the oven for a few minutes, just to make sure the cheese melted. That’s it!
